Chocolate Banana Cupcakes

Christmas Baking!!

One of the things I love the most about holidays is being able to bake goodies for my family and friends,

so when my cousins and I began to plan a white elephant party

I couldn't wait to get started with a yummy dessert!

My brother and I began to brainstorm cupcake flavors like crazy

and after a twenty minute talk mixing crazy flavors,

we decided to use the extra bananas we had, so

we chose a chocolate cupcake with a caramel banana filling

and vanilla buttercream frosting!

(all the ingredients will be listed at the end of the post)

Let's begin baking!

First things first, we need to begin making our filling because it will need to chill for at least an hour.

1. For the filling zombie 3/4 of brown sugar, 1/2 a banana, and 1 1/2 tbs of butter in a food processor and blend until smooth.

2. Add 3/4 cup of heavy cream and blend. Now let's caramelize it!!

take the mixture and put it into a saucepan on medium heat.

3. Whisk the mixture until the sugar dissolves and the mixture boils.

Let the mixture boil for about six minutes without mixing or stirring.

4. Pour mixture into a bowl. Cool to room temperature, occasionally whisking.

5. With a hand mixer or standing mixer whisk 1 cup and 2 tbsp of heavy cream

and confectioners sugar until soft peaks form. Fold the caramel into the cream. Cover and refrigerate

While the filling is cooling we can get started with the chocolate cupcakes!

Began by preheating the oven to 350 degrees.

1. Sift 1 cup of cake flour, 1/2 cup of cocoa powder, 1/2 tsp of baking soda and baking powder.

2. In a electric mixer beat 1/2 cup of butter and 1 cup of sugar until light and fluffy.

3. Beat in 2 eggs, one at a time, and then add 2 tsp of vanilla extract.

4. Mix in 3/4 cup of buttermilk on low speed until well blended. Then add in the dry ingredients and beat until smooth.

Finally pour the batter into the cupcake liners and bake for 8 min. then rotate a d bake for 8 more min.

It is Buttercream time!

1. In a electric mixer, beat 1/2 cup of butter and 1/2 of vegetable shortening on medium speed until creamy.

2. In a separate bowl shift 2 cups of confectioners sugar and then add into the butter mixture

and blend in low speed until it begins to incorporate.

3. Add in 3/4 of vanilla extract, and beat at medium to high speed until fully incorporated.

Now that we have all the component, we can assemble the cupcakes!

with a spoon take out a small portion off the cupcake, be careful not to go through the bottom of the cake.

Squeeze in the cream filling into each of the cupcakes and

top it off with the vanilla buttercream frosting.

Now the fun part! DECORATING!!

I decided to use festive cupcake liners and since I made about 16 cupcakes,

I decided to decorate some for the party as party gifts so my cousins could take some home.

and the rest I made into a cake type of thing.

For the party gifts cupcakesI wanted to keep the decorating a bit more simple

since the cupcake has so much to it, so I used these sugar flowers that I found at target.

For the party I made the cupcakes into a white Christmas tree and decorated it with sugar lights, also from target.

The cupcakes tasted SO good! and they were very fun to make, yes they took a while, but they were worth it!

Banana Caramel Filling:

3/4 cup light brown sugar

1/2 small ripe banana

1 1/2 tbsp unsalted butter, room temp.

4 cups heavy cream

1 tbsp confectioners sugar

Chocolate Cupcake:

1 cup cake flour

1/2 cup cocoa powder

1/2 tsp baking soda

1/4 tsp baking powder

1/2 cup of unsalted butter, room temp.

1 cup sugar

2 large eggs

2 tsp vanilla extract

3/4 cup buttermilk

Vanilla Buttercream Frosting:

1/2 cup unsalted butter, room temp.

1/2 cup trans fat-free vegetable shortening

2 cups confectioners sugar

3/4 tsp vanilla extract
